High Protein Slow Cooker Taco Soup

Ingredients

  • 2 lbs 2 Ground Beef

  • 2 10oz can 2 RO-TEL (green chilies with diced tomatoes)

  • 4 sections 4 Laughing Cow Cheese

  • 1 15oz can 1 Corn

  • 1 quart 1 chicken broth

  • 1 1-oz 1 packet ranch seasoning mix

  • 1 1-oz 1 packet taco seasoning

  • 1 1 yellow onion

  • 1 15oz can 1 black beans

  • avocados for serving (optional)

  • shredded cheese for serving (optional)

  • greek yogurt for serving (optional)

  • limes for serving (optional)

Directions

  • Heat a pan over medium-high heat. Brown ground beef with chopped onion over medium heat until no longer pink, breaking it into crumbles; drain.
  • With meat browning, add Rotel, corn, chicken broth, and black beans to 6-qt Slow Cooker. Add taco seasoning, ranch seasoning, and mix well. Stir in the ingredients.

  • Once your ground burger is cooked, mix burger/onion mix in crock pot with ingredients until fully combined.
  • Cook on low for 6 hours, stirring occasionally. Add Laughing Cow Cheese wedges during last 30 minutes of cooking.
  • Serve, topped with greek yogurt for extra protein, chopped cilantro leaves, lime juice, cheddar cheese, and avocado, if you like.
